I have some over ripe bananas. It doesn’t taste that good anymore if you just eat it as fruit. The over ripe banana will smell much better when you cook it and the aroma is so nice. Here is my banana oat pancake recipe:
3 ripe bananas — mashed usinh fork
1 egg (I used 2 white eggs and 1 yolk because I have 1 white egg left over)
2 tbs sugar (optional)
4 tbs oil
1.5 cup of oatmeal (I used instant oatmeal)
1 cup of flour
0.5 tsp baking powder
1 tsp baking soda
1 tsp kanel
0.5 tsp vanilla
A pinch of salt
0.5-1 cup of milk
Mix egg and sugar vigorously. Add banana and oil, mix. Mix all the dry ingredient and add to the egg-banana mixture gradually while pouring milk. You can adjust the thickness of your dough by adjusting the milk amount.
*You can omit the sugar from the recipe. Some types of banana will be sweet when it is ripe and if you add more sugar, it will be too sweet although only 2 tbs.
*You can use the same recipe for the original pancake (without banana and oat). Add flour into 2 cups and sugar into 4 tbs.
